VINEYARD
The Comté Tolosan, an Aquitaine vineyard, stretches across the wide terraces between the Pyrenees and the Massif Central.
TERROIR
The presence of quartz in this poor and gravelly soil allows a good adaptation of the 2 major grape varieties: Viognier and Roussanne.
GRAPE VARIETY
50% Roussanne, 50% Petit Manseng. Harvested late, these grape varieties are capable of concentrating sugars in the berries while maintaining high acidity. They naturally produce very aromatic and high-quality sweet wines.
VINIFICATION
Harvested after all other grape varieties on the estate, the clusters are very ripe and exhibit a high concentration of sugar. Picked during the cool morning hours, the grapes are completely destemmed, lightly crushed, and then pressed using a closed-cage pneumatic press. The must is carefully protected from oxidation, cold settled, and then fermented. This process is very slow (4 to 5 weeks) and takes place in a temperature-controlled stainless steel tank between 15 and 17°C. At the end of fermentation, the racked wine is stirred and aged on fine lees for several months. It is then clarified and stabilized before bottling.
TASTING
The color is yellow with a slight golden hue, bright and luminous. The nose reveals pleasantly toasted floral notes such as acacia, along with honey and exotic fruits. On the palate, the attack is elegant and smooth, with predominant notes of pineapple and pear. The finish is long and finely acidic. Can be stored for 3 years depending on storage conditions.
