VINEYARD
The Comté Tolosan, an Aquitaine vineyard, stretches across the wide terraces between the Pyrenees and the Massif Central. The Domaine du Château Bellevue la Forêt is located in the Fronton appellation and is primarily dedicated to red and rosé wines. However, it contains a small area of less than one hectare planted with vines of the prestigious white grape variety Viognier.

TERROIR
The presence of quartz in this poor and gravelly soil allows a good adaptation of the Viognier grape variety.

GRAPE VARIETY
100% Viognier. This variety has small clusters with small, golden berries. It produces wines of great finesse, fragrant and rich. It is an ancient variety spread across all continents. It belongs to appellations such as Condrieu and Côte Rôtie.

VINIFICATION
It is harvested during the cool, early hours of the day. The clusters are completely destemmed, lightly crushed, then pressed using a closed cage pneumatic press for better extraction of the grape constituents. The must is carefully protected from oxidation, cold-settled, and fermented. This fermentation is slow (3 weeks) and takes place in a thermo-regulated stainless steel tank between 14 and 15°C. As soon as fermentation ends, the racked wine is stirred and aged on fine lees for several months. It is then clarified and stabilized before bottling.

TASTING
The color is pale yellow and bright. Nose of honeysuckle and flowers like acacia. Notes of pear and peach. On the palate, the attack is powerful and full-bodied. The palate is balanced and round with a spring-like freshness. Storage of 2 years depending on storage conditions.

PAIRINGS
It can be enjoyed on its own as an aperitif. It pairs with scallops in ginger sauce, pike quenelles, braised ham, veal blanquette, fresh goat cheese. It is also suitable with spicy dishes such as tagines and couscous.
