The Frontonnais, a vineyard near Toulouse, extends over the wide terraces between the Garonne and Tarn rivers, leaving Toulouse via the right bank.
Terroir
The presence of iron and quartz in this poor and gravelly soil allows the Négrette grape to express its very special character, with aromas of violet and black fruits (blackberry-cherry-blackcurrant). A sincere, inimitable wine that cannot deny its origin.
Grape varieties
85% Négrette, 10% Gamay, 5% Cabernet Sauvignon. The Négrette, a grape variety unique to the world, appeared in the 12th century under the name "MAVRO" (black in Greek) brought back from Cyprus by the Knights of the Order of Saint John of Jerusalem. Demanding, it has acclimated to this unique terroir of Fronton; Négrette is one of the rare grape varieties revealing in the wine aromas identical to those found when biting into fresh grapes.
Vinification
The harvest is carried out during the cool, early hours of the day. It is destemmed, lightly crushed, macerated, then pressed using a closed cage pneumatic press for better extraction of the grape constituents. The musts are carefully protected from oxidation by blanketing with inert gas throughout vinification. The grape varieties are vinified separately. The clarified musts ferment very slowly (3 weeks) in temperature-controlled tanks at 17°C. As soon as fermentation ends, the wine is stirred and aged on fine lees for several months. After blending, it is clarified and stabilized before bottling.
Tasting
Pale rose petal color, clear and bright. Intense and fresh nose, notes of citrus and wild strawberry. The palate is both lively and smooth, balanced and mellow, supported by notes of red fruits. A finish that is slightly spicy and tangy. Storage of 1 to 2 years depending on storage conditions.
Pairings
This wine can be enjoyed alone as an aperitif. Tapas, Iberian ham and chorizo, salmon tart, leek pie, stuffed peppers, tarragon chicken, sushi and sashimi, fresh goat cheese, Salers, red fruit desserts (Bavarian cream, mirror glaze, cheesecake).
